Smoky Brussel Sprouts
1 lb. brussel sprouts, halved (about 4 cups)
2 onions, sliced in half-moons
1 shallot, sliced in half-moons
5 cloves garlic, minced
1 Tb. olive oil
1/2 tsp. chili pepper flakes
1 tsp. smoked paprika
1 tsp. orange zest
salt and pepper, to taste
Preheat oven to 350. Combine all ingredients in a casserole dish and bake, covered, for 60 minutes until all ingredients are tender and cooked-through. Uncover, stir and cook another ten minutes. Serve warm.
