This peanut butter pie is our variation on an old-school, vegan classic. The base of the pie is silken tofu. From there, you can tinker with the flavors a little. There are chocolate tofu pies that taste kind of like fudge, and types made with different nut butters and sweeteners. Super Simple Peanut Butter Pie
2 12-oz. boxes firm silken tofu, drained (we use Mori Nu Lite)
4 Tbls. maple syrup
1 tsp. vanilla
1 cup smooth peanut butter
2 Tbl. arrowroot powder
one pre-made graham crust pie shell (our store brand is vegan)
chopped nuts or chocolate syrup, to serve
Combine drained tofu, maple syrup, vanilla, peanut butter and arrowroot powder in a food processor or blender. Mix until very smooth and well incorporated.
Pour into pre-made graham crust pie shell and chill overnight. Serve cold, garnished with chopped nuts and/or drizzled chocolate sauce.
