Salt of the Earth 2: Sweet Potato Fries


Our first recipe using fancy salts… Anyone can tell you how delicious fries are. Crisp, crunchy, savory finger food, complete with salty goodness. We made these fries with hand cut sweet potatoes and Herbs de Provence salt.

Sweet Potato Fries

4 large sweet potatoes (scrubbed clean OR peeled)

2 Tbl. coconut oil, melted to liquid form

2 to 3 tsp. Herbs de Provence salt

Preheat oven to 425 degrees. Line a large baking sheet with parchment paper or a Silpat.

Cut sweet potatoes into long thin strips, like fries. Toss in a large bowl with coconut oil to coat and spread across the baking sheet in a single layer. Sprinkle liberally with Herbs de Provence salt.

Bake at 425 for 15 minutes, then take out and stir/rearrange the fries to ensure even crisping. Place back in the oven and bake another 10 to 15 minutes until hot and crunchy. Allow to cool a few minutes before you dig in. Sprinkle with more Herbs de Provence salt is desired.
